Potato Pizza with Prosciutto and Arugula


About a month or so ago, we went to a screening of The Girl With The Dragon Tattoo
(one of the perks of having a husband that works in "the industry"),
then treated ourselves to dinner at Pitfire Pizza, a local artisan pizza place.
Now, usually, I don't mess around too much with pizza.
Give me some pepperoni, sausage, and/or mushrooms and I'm good.
But this night I decided to try the potato and radicchio pizza.
And it was De. Lish. Ous.
As in, I gobbled up the whole thing by myself.
And kinda wanted to order another one.

Since pizza is a pretty quick and easy dinner to throw together,
 I decided to make my own version of the yummy potato pizza.
Basically you get some pizza dough, layer on a bunch of toppings,
throw it in a very hot oven, and have dinner ready in 15 minutes.
What could be better?


Here's how I made my pizza...

Potato Pizza with Prosciutto and Arugula

Pizza dough (I used Pillsbury)
Olive Oil
2 cloves garlic, minced
1 ball fresh mozzarella, sliced
1 medium red potato, sliced thin
2-3 slices Prosciutto (because we had some in the fridge)
Handful of Arugula
Salt & Pepper

Heat oven to 450.
Stretch or roll out the dough to your desired size on a baking sheet or pizza stone.
(If the dough keeps shrinking back on you, let it rest a few minutes before trying again)
Brush with olive oil, leaving a 1 inch border for the crust.  Sprinkle with garlic.
Arrange mozzarella slices throughout the crust.
Layer the potato slices on top of the cheese.
Tear prosciutto into pieces and throw on top of the potatoes.
Sprinkle with a handful of arugula.
Season with salt & pepper.
Throw in the oven and bake for 15-20 minutes, until crust is golden brown.
Slice, and gobble up!

    When Rod and I get pregnant I'm going to have to buy him "Dude, you're gonna be a dad"! Sounds funny!
